It’s no secret on this blog that I love bread and one thing that I have found with vegan sandwiches and toast toppings is that you really can’t just replace the non-vegan toppings with vegan versions. I don’t know about you but a sandwich with vegan ham and vegan cheese just isn’t that appealing. As such, my courgettes on toast recipe was born.
I am also a huge fan of a good breakfast but my distaste for most sweet things makes breakfast feel like the time when I’m most limited with food. As such, I started experimenting with various different super simple toast toppings and this is the first one that I’m happy enough with to turn into a recipe.
I feel like courgettes get a rough time from people as, let’s be honest, they can be grim if not done right though. To me, they can be amazing especially with a few simple additions like garlic and basil. The ingredients for this are often ones that I just have lying around, be that from making pesto or my vegan spaghetti bolognese.
Let me know what you think of recipes like this. Perhaps too simple or maybe just what this blog needed. Either way it’s always the best part of my day when someone tells me that they’ve cooked one of my recipes.
