Roast Sweet Potato and Carrot
large sweet potatoes
Cut into wedges
cut into wedges similar size to sweet potato
Not peeled or chopped just bashes with the side of the knife
Preheat the oven to 200°C
Add the sweet potato wedges, carrot wedges, garlic cloves and rosemary to a large baking tin.
Drizzle with a generous amount of olive oil, enough to coat all of the veggies well.
Roast for 40-45 minutes, stirring every 15 minutes or so, until well cooked and starting to caramelise.
