In my last recipe, I used the excuse of looking for a job as the reason for not posting a new recipe and excitingly this time around my excuse is starting a new job. Alongside that, the closer we got to Ireland’s abortion referendum, the more my meals turned into either takeaway or crisps so now that I am finally getting back into a normal routine, I have more time to cook things like these delicious vegan jambons.
This recipe is actually one I developed while I was so busy as it’s one of the simplest and quickest on the blog. I have been looking for vegan jambons as long as I have been vegan but have never come across them. One day while staring longingly at the deli counter I thought to myself – they would actually be super easy to make at home.
It’s no secret how much I love pastry and I am on a mission to spread the word that most pre rolled pastry sheets are vegan. This opens a world of opportunities, some of which I have explored on this blog like vegan sausage rolls, vegan vol an vents and vegan puff pastry slices. I feel like I have a lot to prove with pastry now that my legacy will forever more be cremating an entire tray of sausage rolls.
This recipe doesn’t really require much prep. If you have the time, you can make your own vegan tofu bacon to use in this recipe but it’s definitely not a requirement. If you can find some decent vegan cheese (like Follow Your Heart) and some decent vegan ham (like the Tofurky ham) you can pull these vegan jambons together in minutes.
