Vegan Kimchi Fried Rice: A Recipe from Fionn

It’s only been a few days since my good friend Fionn left for China and let me tell you – I miss him already. Luckily, as a parting gift he left me with his vegan kimchi fried rice recipe and I thought it only right to share it far and wide – it is that good.

One of my favourite things about cooking is being able to share it with others. Whatever form that takes, I don’t really mind, but sharing recipes is definitely my favourite.

Once something I thought only limited to tin foil boxes from the Chinese, fried rice is easily one of my favourite things to eat. This recipe is definitely one that Fionn downplays but sometimes the most simple of recipes are the best. I am going to miss making this together, and his company in general, but hopefully by the time he gets back I will be able to make it just as well as he can.

I adore kimchi, although still slightly fearful of ever making my own.

Luckily, you don’t have to make your own comes in an incredibly handy packet – ready sliced! Keep an eye on the ingredients though, some are not vegan. If you have any questions, give me a shout. If not, here is vegan kimchi fried rice:

Ingredients
  • 500g packet sliced vegan kimchi in brine some kimchi isn't vegan, keep an eye out for fish and oyster sauces
  • 500 grams white rice
  • 300 ml cold water
  • 1 tbsp vegetable oil
  • 2 tbsp sesame oil
  • 1 tsp soy bean paste optional
  • 1 tsp chilli paste optional
  • 4 spring onions sliced, the greens only

Ingredients
  • 500g packet sliced vegan kimchi in brine some kimchi isn't vegan, keep an eye out for fish and oyster sauces
  • 500 grams white rice
  • 300 ml cold water
  • 1 tbsp vegetable oil
  • 2 tbsp sesame oil
  • 1 tsp soy bean paste optional
  • 1 tsp chilli paste optional
  • 4 spring onions sliced, the greens only

Instructions
  1. Separate the kimchi from the brine and keep in separate bowls.
  2. Wash rice thoroughly 2-3 times until the water runs clean.
  3. Add the rice and water to a pan over medium heat.
  4. Cook rice for 12-15 minutes until the rice is soft and the water has evaporated. Add more water if needed. Remove from the heat.
  5. Heat the vegetable oil in a large frying pan over a medium heat.
  6. Add the drained kimchi and cook for 2-3 minutes.
  7. Add the cooked rice and cook for a further 2-3 minutes until fully incorporated.
  8. Add the brine from the kimchi, and soy and chilli pastes if using.
  9. Cook for a further 3-4 minutes.
  10. Add the sesame oil. Cook for a further minute.
  11. Top with the spring onion greens and serve.
