Vegan Kimchi Fried Rice: A Recipe from Fionn
sliced vegan kimchi in brine
some kimchi isn’t vegan, keep an eye out for fish and oyster sauces
soy bean paste
sliced, the greens only
Separate the kimchi from the brine and keep in separate bowls.
Wash rice thoroughly 2-3 times until the water runs clean.
Add the rice and water to a pan over medium heat.
Cook rice for 12-15 minutes until the rice is soft and the water has evaporated. Add more water if needed. Remove from the heat.
Heat the vegetable oil in a large frying pan over a medium heat.
Add the drained kimchi and cook for 2-3 minutes.
Add the cooked rice and cook for a further 2-3 minutes until fully incorporated.
Add the brine from the kimchi, and soy and chilli pastes if using.
Cook for a further 3-4 minutes.
Add the sesame oil. Cook for a further minute.
Top with the spring onion greens and serve.
