Vegan Kimchi Fried Rice: A Recipe from Fionn

Ingredients
  • 500gpacket sliced vegan kimchi in brinesome kimchi isn’t vegan, keep an eye out for fish and oyster sauces
  • 500grams white rice
  • 300ml cold water
  • 1tbsp vegetable oil
  • 2tbsp sesame oil
  • 1tsp soy bean pasteoptional
  • 1tsp chilli pasteoptional
  • 4 spring onionssliced, the greens only
Instructions
  1. Separate the kimchi from the brine and keep in separate bowls.
  2. Wash rice thoroughly 2-3 times until the water runs clean.
  3. Add the rice and water to a pan over medium heat.
  4. Cook rice for 12-15 minutes until the rice is soft and the water has evaporated. Add more water if needed. Remove from the heat.
  5. Heat the vegetable oil in a large frying pan over a medium heat.
  6. Add the drained kimchi and cook for 2-3 minutes.
  7. Add the cooked rice and cook for a further 2-3 minutes until fully incorporated.
  8. Add the brine from the kimchi, and soy and chilli pastes if using.
  9. Cook for a further 3-4 minutes.
  10. Add the sesame oil. Cook for a further minute.
  11. Top with the spring onion greens and serve.
