Vegan Mushroom Gravy Recipe: Simple and Delicious

Gravy can really make or break a meal. If it’s good, it pulls a roast dinner together into a rounded but if it’s bad it can leave you with tasteless watery puddles on your plate. This vegan mushroom gravy is the perfect way to have a delicious accompaniment to your roast dinner every time.

The perfect vegan mushroom gravy isn’t difficult to make. It just requires a bit more flavour than what you get in the gravy granules. As we’re not roasting any meat, we have to counteract that lack of umami with something. That’s where mushrooms come in. Add mushrooms to your gravy once and you’ll never go back. They bring a vegan gravy right up to the level of its meaty counterpart.

Ingredients
  • 1 tbsp olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 sprig rosemary leaves removed from stem and finely chopped
  • 200 grams mushrooms sliced
  • 8 tsp gravy granules bisto is vegan
  • 500 ml boiling water

  • 1 tbsp olive oil
  • 1 onion diced

  • 1 sprig rosemary leaves removed from stem and finely chopped
  • 200 grams mushrooms sliced

  • 500 ml boiling water
Instructions
  1. Add the olive oil to a saucepan on a medium heat.
  2. Add the onions and garlic and cook for 3-4 minutes until soft.
  3. Add the rosemary and mushrooms and cook for a further 5-7 minutes until the mushrooms are soft.
  4. Add the gravy granules to a bowl and slowly combine with the boiling water.
  5. A dd the gravy to the saucepan and leave to bubble gently for 10 minutes so the flavours can combine then serve.
