Ingredients
  • 1tbsp olive oil
  • 250grams cherry tomatoeshalved
  • 2 bell pepperssliced
  • 1 pre rolled puff pastry sheet
  • 1/2 batch vegan pestoyou can find my recipe here
  • 1handful fresh spinach
Instructions
  1. Preheat the over to 200 degrees celsius.
  2. Add the olive oil to a frying pan on a medium heat.
  3. Add sliced peppers and tomatoes, season generously with salt and pepper and cook for 4-5 minutes. Take off the heat and set aside.
  4. Roll out the puff pastry out on a baking tray.
  5. Cover with a generous layer of the pesto, leaving a roughly 3cm section of pastry dry around the outside.
  6. Add the tomato and pepper mix on top of the pesto, retaining the dry section around the outside.
  7. Cover with a generous layer of the fresh spinach.
  8. Place into the oven and cook 15-20 minutes until the edges are golden brown and well risen.
  9. Cut into slices and serve.
