Vegan Puff Pastry Slices

Preheat the over to 200 degrees celsius.
Add the olive oil to a frying pan on a medium heat.
Add sliced peppers and tomatoes, season generously with salt and pepper and cook for 4-5 minutes. Take off the heat and set aside.
Roll out the puff pastry out on a baking tray.
Cover with a generous layer of the pesto, leaving a roughly 3cm section of pastry dry around the outside.
Add the tomato and pepper mix on top of the pesto, retaining the dry section around the outside.
Cover with a generous layer of the fresh spinach.
Place into the oven and cook 15-20 minutes until the edges are golden brown and well risen.
Cut into slices and serve.
