Vegan Sausage Rolls Recipe: We Don’t Have To Miss Out

I remember the first day I found out that most Jus Rol pastry products are vegan. It was a revelation, a whole host of tasty and easy things that I could make once again. My mind immediately went to vegan sausage rolls.

It was one of the few times as a vegan that I felt like I was missing out. When you’re surrounded by pastries and cakes at events and all you can eat is the pile of few-day-old fruit, it’s difficult not to feel a bit hard done by.

I always knew that veganism was far more than just “rabbit food” but I have to admit that I initially too though that delicious pastries may always be off limits.

Luckily, tasty pastries even better than the non-vegan counterparts are easy, cheap and so worth it. I am all about comfort food and there’s very little that’s more comforting than an excessively large pile of these vegan sausage rolls and an entire series to watch on TV.

This is probably one of the more complex recipes that I’ve posted so if it doesn’t make sense get in touch and I’ll do my best to make sure you have as easy a time cooking these as you do eating them. You’ll also need a blender, something which hasn’t featured in any recipes yet, but any blender will do and you can do in batches.

Ingredients
  • 2 pre rolled puff pastry sheets Jus Rol is vegan
  • 300 grams mushrooms any type will do
  • 1/2 onion roughly chopped, any type will do
  • 2 cloves garlic minced
  • 4 - 5 sprigs rosemary
  • 6 - 6 sprigs thyme
  • 1 tin green lentils
  • 100 grams dried soy mince
  • 3 tbsp nutritional yeast
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 vegetable stock cube
  • 100 ml boiling water

Ingredients

  • 300 grams mushrooms any type will do
  • 1/2 onion roughly chopped, any type will do
  • 2 cloves garlic minced
  • 4 - 5 sprigs rosemary
  • 6 - 6 sprigs thyme
  • 1 tin green lentils
  • 100 grams dried soy mince
  • 3 tbsp nutritional yeast
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 vegetable stock cube
  • 100 ml boiling water

Instructions
  1. Preheat the oven to 200 degrees celsius.
  2. Heat the olive oil in a frying pan then add the onion and garlic.
  3. Fry for 3 - 4 minutes until soft.
  4. Remove the leaves from the rosemary and roughly chop with the thyme, chop and add to the frying pan.
  5. Roughly slice the mushrooms and add to the pan.
  6. Fry for 7 - 10 minutes until everything is soft and then remove from the heat.
  7. Drain the green lentils and add to the blender with the dried soy mince, nutritional yeast and soy sauce.
  8. Add the mushroom mix to the blender.
  9. Add the boiling water to the stock cube and stir until dissolved.
  10. Add the stock to the blender with a generous amount of pepper.
  11. Blend until smooth.
  12. Roll out the pastry sheets and cut in half lengthways.
  13. Add a quarter of the sausage mix down the middle of each of the strips of pastry.
  14. Fold over the pastry and seal run a fork down the length of the seam to seal the pastry.
  15. Run a fork down the other side to match the design.
  16. Cut into desired length and add two slits to the top of each sausage roll.
  17. Transfer to baking tray and brush with oil.
  18. Cook for 20-25 minutes or until golden brown
