  • 2 pre rolled puff pastry sheetsJus Rol is vegan
  • 300 grams mushroomsany type will do
  • 1/2 onionroughly chopped, any type will do
  • 2cloves garlicminced
  • 4 – 5sprigs rosemary
  • 6 – 6sprigs thyme
  • 1tin green lentils
  • 100 grams dried soy mince
  • 3tbsp nutritional yeast
  • 2tbsp soy sauce
  • 1tbsp olive oil
  • 1 vegetable stock cube
  • 100ml boiling water
  1. Preheat the oven to 200 degrees celsius.
  2. Heat the olive oil in a frying pan then add the onion and garlic.
  3. Fry for 3 – 4 minutes until soft.
  4. Remove the leaves from the rosemary and roughly chop with the thyme, chop and add to the frying pan.
  5. Roughly slice the mushrooms and add to the pan.
  6. Fry for 7 – 10 minutes until everything is soft and then remove from the heat.
  7. Drain the green lentils and add to the blender with the dried soy mince, nutritional yeast and soy sauce.
  8. Add the mushroom mix to the blender.
  9. Add the boiling water to the stock cube and stir until dissolved.
  10. Add the stock to the blender with a generous amount of pepper.
  11. Blend until smooth.
  12. Roll out the pastry sheets and cut in half lengthways.
  13. Add a quarter of the sausage mix down the middle of each of the strips of pastry.
  14. Fold over the pastry and seal run a fork down the length of the seam to seal the pastry.
  15. Run a fork down the other side to match the design.
  16. Cut into desired length and add two slits to the top of each sausage roll.
  17. Transfer to baking tray and brush with oil.
  18. Cook for 20-25 minutes or until golden brown
