Vegan Sausages and Gravy: Simple, Savoury and Tasty

Okay, so I’m going to lay my cards out on the table that this recipe doesn’t contain a recipe for sausages nor does it really contain a recipe for gravy but in my opinion if it ain’t broke, don’t fix it. I am never going to do a better recipe than Linda McCartney than sausages and I am happy to accept that (except maybe my sausage rolls that is).

Along with this, I’m not one for spending the time making my own gravy when bisto and a few extras makes the best gravy I have ever made. This is a recipe for when you don’t want to cook. The five minutes it takes to pull this together is definitely worth it over having the sausages on their own.

Simplicity really is the key here. I love vegan sausage and gravy with mash and some sort of veg but anything with a little bit of soakage for the gravy will do perfectly. If you have a better sausage recipe than Linda or other shop-bought ones, I’d love to hear from you but for now a super simple vegan sausages and gravy recipe:

Ingredients
  • 6 vegan sausages linda mccartney is best
  • 1 onion quartered
  • 2 cloves garlic peeled and pressed with the end of the knife
  • 2 large sprigs rosemary
  • 1 tbsp olive oil
  • 4 heaped tsp gravy granules bisto "favourite" gravy granules are vegan
  • 2 heaped tsp nutritional yeast
  • 300 ml boiling water

  • 1 tbsp olive oil

  • 2 heaped tsp nutritional yeast
  • 300 ml boiling water

Instructions
  1. Preheat the oven to 200°C
  2. Add the sausages, onion, garlic and rosemary to a casserole dish and drizzle with the olive oil.
  3. Cook for 15-20 minutes until the sausages are browning and the onions are cooked, stirring after about 10 minutes.
  4. Mix the gravy granules with the nutritional yeast and season well with pepper.
  5. Add the boiling water to the granules and stir until fully combined.
  6. Remove the garlic cloves from the sausage mix (or leave them in if you don't mind it extra garlicky)
  7. Pour over the gravy and return to the oven for a further 10 minutes.
  8. Serve with mash and veg, or whatever takes your fancy.
