Add the vegetable oil to a large heavy based pan (or a wok if you are using gas) over a high heat.
Add the onion, garlic, chilli and ginger once the oil is hot and cook for 2 minutes, regularly stirring.
Add the peppers, and cook for another 2 minutes.
Add the mangetout and baby corn and cook for another 2 minutes.
Add the mushrooms and cook for a further 2 minutes.
Add the noodles, coriander, soy sauce, lime juice and pepper to taste. Cook for a final 3 minutes, or as long as it takes for the noodles to cook properly, and serve.
