If you follow me on Instagram, or have just been in my house in the morning time, you’ll know just how much I love a nice breakfast. Sunday mornings are for coffee, minimal moving and a fried breakfast. “But what about the bacon??” I hear people cry. Luckily, a vegan fried breakfast can be just as good as a meat-based one, and it starts with my vegan tofu bacon.

Simple recipes are always a priority with ones like my vegan garlic bread being near to the top of my list with only four ingredients. Flicking through vegan recipe books and seeing ingredients that I wouldn’t know where to start looking for is endlessly frustrating. This recipe is super simple as I truly believe that things don’t need to be complicated to be tasty.

Tofu is an ingredient that I actually rarely cook with, but am coming to appreciate more and more. If you do tofu wrong it’s really not great. I think before I started working on this recipe I had never got it quite right, with everything always becoming different variations of tofu scramble.

Luckily, if you put the time in with this in pressing, marinating and ensuring your pan is super hot, it’s very hard to go wrong. Vegan tofu bacon makes the perfect addition to your breakfast or even works great to confuse your coworkers when you tell them you’re eating a bacon sandwich.

Passive Time 1 hour (or 30 minutes if you're stuck for time)
Servings
Ingredients
  • 400 grams firm tofu drained
  • 200 ml dark soy sauce
  • 4 tsp smoked paprika
  • 1 tbsp vegetable oil
vegan tofu bacon
Instructions
  1. Lay out 10-15 sheets of kitchen roll in a pile on a plate, place the block of tofu on the kitchen roll and place another 10-15 sheets on top.
  2. Place another plate on top and something to weigh it down (like a tin) on top of that.
  3. Leave the tofu to press for around an hour if you have the time but at least 15 minutes if not.
  4. Take the tofu out of the kitchen roll and place on a chopping board.
  5. Slice the tofu as thinly as possible. The thinner the slice, the crispier the bacon.
  6. Mix the the soy sauce and the smoked paprika together in a bowl.
  7. Add in the tofu slices and leave to marinate for at least 15 minutes up to a maximum of an hour.
  8. Heat the oil in a frying pan on a high heat until almost smoking.
  9. Add the tofu bacon and cook for 3-4 minutes on each side until crispy. Be careful not to overcrowd the frying pan and cook in batches. Add a small bit more oil to each batch.
  10. Transfer the bacon to a sheet of kitchen roll to remove excess oil and serve immediately.
